BELOIT — A self-professed “skinny kid at Beloit Memorial High School,” Adrian Diaz’s life took a turn because of a college project.
“I was going to (the University of Wisconsin-Whitewater) to study business and I had to do a project about nutrition to get a science credit,” the 25-year-old Diaz said. “I just got interested in the subject and started to change my lifestyle.”
