The New Orleans area is getting its first Chicken Salad Chick location after two high school friends reunited and made plans to open a store in Metairie.
Anne DiPaola and Tiffany Spring will open the chicken salad shop at 3005 Veterans Blvd. in Metairie this April, the business said in a Facebook post this month.
The shop is one of four opening in the New Orleans area, which are each in various stages of development.
The two also acquired the Slidell location at 1522 Gause Blvd.
Spring and DiPaola said on social media that they were friends during their time at Cabrini High School but hadn’t crossed paths again until more recently, when both of their daughters transferred to St. Dominic School at the same time and became friends.
Once their daughters graduated to their alma mater, Cabrini, the two mothers rekindled their own friendship and decided to pursue the new business, they said.
DiPaola has more than two decades of public relations experience, and Spring has worked in healthcare administration for 21 years.
“I’ve been a fan of Chicken Salad Chick going all the way back to high school when I ate there every day for four years,” DiPaola said in a press release last summer. “My love of their food, along with the straight-forward menu and dedication toward community service are what sold me on getting involved with this brand.”
The two women signed the franchise agreement with their husbands, Bill DiPaola and Paul Spring. Bill is the CEO of the franchise ownership holding company NHG LLC and on the Legislative Action Group for the International Franchise Association. Paul is a surgeon and physician.
Chicken Salad Chick is a fast-casual restaurant starting in Auburn, Alabama, that offers chicken salad in flavors like “Kickin’ Kay Lynne” and “Classic Carol,” as well as soups, sandwiches and desserts.
There currently 12 stores in Louisiana, including two on the northshore in Slidell and Mandeville and one in Thibodaux.
The business has over 225 restaurant locations nationwide.
